Mushroom Stir Fry Ingredients |
I'm about 75% vegetarian and 95% pescatarian now. It's taken me long enough. I've been trying to be vegetarian for years but kept going back to meat. Anyway, along my ongoing journey to vegetarianism, I have gotten to like a few recipes. The latest one, Mushrooms Stir Fried, is what I will share with you today.
Mushroom Stir Fry
Ingredients
2 cups clean mushrooms (see video below)
1 large green pepper
1 stalk Escallion
1 medium onion
1 clove garlic
1 large piece bok choy or medium cabbage
1/4 - 1/2 cup snow peas
1 tbsp coconut oil
Soy sauce, black pepper and sea salt to taste
Optional Ingredients
Red pepper
1 small carrot
Califlower
Broccoli
Ginger (great flavour-changer)
Prep Tips:
- Slice mushrooms as shown in video below
- Slice Carrot and Green Peppers (same size as mushrooms)
- Dice onion, garlic and escallions
- Saute diced onion then add garlic and escallion a few seconds toward the end (in coconut oil).
- Add your mushrooms, green peppers and snow peas. Add sea salt and black pepper and a dash or two of soy sauce.
- Add the remaining ingredients and add a bit more oil and soya sauce to taste.
- Sit fry and steam to add moisture by covering the pan briefly from time to time.
- If desired, sprinkle water for moisture.
- Keep stirring until finished.
Serve warm with brown rice or pasta if desired.
