Callaloo with Sausage?

The excessive coughing and runny nose was not going to stop me from having at least one healthy meal for the day. After a long day in bed, I finally decided to cook.  I had no saltfish to make my regular Callalloo and salfish (a popular Jamaican dish) so I decided to improvise with some vegetarian franks. See how I did it below.

What You'll Need: Callalloo (I use pre-cut callaloo but you can also use cabbage), 1/4 green (bell) pepper, 1/2 a fresh onion, one clove garlic, some type of meat or vegetarian meat substitute, salt, pepper, all purpose seasoning, oil and water.


Step 1: Dice your seasoning and meat of choice then saute in oil on medium heat.


Step 2: Add your Callaloo, sprinkle with water and mix.


Step 3: Add salt, pepper and all purpose seasoning to taste and continue to mix. 



Step 4: Cover the mixture and set it to simmer on low heat until tender.


Compliment: Serve with Jamaican Yams, mashed or baked potatoes or just any your starch of choice. Check out the video below to see how to do quick microwaved potatoes.

  1. This looks yummy! I am also a Pescetarian and looove me some fish! Lol, my jamaican co-worker just gave me a recipe for (I forget the name but it has codfish, ackee, peppers and onions. I cannot wait to get home to make this tonight!
